I love lists.
I truly love them. The sweet satisfaction of writing things down and then crossing them off...sometimes I write down things I've already done just so I can put a line through them and feel like I really accomplished something.
If B mentions going to the grocery store, I can't function unless I've written a list. And when we go on vacation, I plan massive itineraries.

The one "list" I struggle with is meal planning. I love to plan meals and then halfway through the week I love to order pizza from Costco.
So, when I saw my friend Tammy linking up for Meal Plan Pin Monday, I had to do it. {She's in the Caribbean while her husband attends St. George. Which isn't actually how we "met." We've "known" each other for years!} Here's what we're theoretically eating this week.
Monday: Grilled Chicken Salad with Strawberries, Pecans and Avocado.
{I'm adding feta cheese to this because I have no control when it comes to cheese.}

Tuesday: Penne with Spinach Sauce
{I love pasta. I could eat it every day of the week, but I think B would die.}

Wednesday: Chicken and Bean Burrito Verde

Thursday: Cauliflower Soup
Friday: Risotto with Peas
{My mom gave me some super nice risotto. I'm excited to use it and see how it compares to arborio.}
Saturday: Apple-Honey Drumsticks
Sunday: Roast Chicken with Lemon and Dill
{This is seriously the best roast chicken ever. I'm not going to lie, it takes awhile to make, but it is so good.}
Okay, now I'm very, very hungry. And Tyler Florence is making sweet potato fries on TV. I know what I'm having for lunch.
I'm unhealthy.

Thanks for some great meal ideas!!!!! I too am a list writer - cannot live without them.
ReplyDeleteChey xo
Ohhhh that lemon dill roasted chicken looks SO good!!
ReplyDeleteI love lists too... and crossing off things just brings some sort of strange satisfaction. Maybe we have issues? Or maybe we're just awesome!!!
I'm stealing some of these. And I went to the grocery store last week sans list. Needless to say I wandered the aisles for thirty minutes, bought nothing, and went home. Never again.
ReplyDeleteI'm definitely a meal planner - every Sunday I sit down and make a list of our meals for the week along with a grocery list. It helps keep me accountable, helps us on nights when I don't want to think of something to make, and helps keep food costs down as well!
ReplyDeletealso, I hope I'm not behind on this, but your new blog look is BEAUTIFUL! I Love it!
I'm so excited that you're doing this! :) I Love lists too.
ReplyDeleteI'm hungry now too. Sigh. :)
I too cannot shop without a list. And I can't make a list without making a meal plan! (Also - my husband laughs at my perpetual "packing lists" that I keep in spreadsheets on my computer. My love for lists runs deep!).

ReplyDeleteThis is hands down, best peanut butter cookie recipe ever. Seriously. I don't know if I even really like peanut butter cookies- but I think it's the parchment paper, because the pan I brought here is ancient. Seriously, it's a small-ish pan from Ikea with no edges and it's black. Really black, and my cookies turn out fine. I think it's the parchment paper?
Also, I don't put peanut butter chips in it. Seriously, I laugh at this. I would if I lived in the US, but here, they don't know what peanut butter chips are. They're deprived, you know. I also don't usually put the milk in. We run out of this or it becomes yogurt before I have the chance. haha. But when I do, they are so super soft, softer than usual? The sugar on the outside is something that's so important. Seriously. It does something. You'll eat other people's peanut butter cookies, after having these ones and say, "oh. this is missing something," and then you'll think to yourself and say, "DUH, sugar and chocolate chips." Or, if you're Moe this is the conversation you'd have with me. So good. I love this recipe! It's on pinterest, too, btw. :) Baking board.
I'll have to let you know about the homemade tortillas, but I guess they will be easy enough. I make Pita bread pretty regularly, or I was, but now I haven't found fava beans in weeks so we haven't made falafels lately, but..I roll pita out thin enough so I think the same will be for the tortillas. I'll report back soon. :)
I make things with a wooden spoon. :) Kitchen appliances (kitchen aid mixer should for sure be on that list, I hope! :) are the best things to have as someone who enjoys cooking. Here we just have a blender, and it's not even that good of a blender, haha. :) I'm happy to have a stainless steel bowl. :) it's the little things in life. haha.
New air conditioning unit, awesome! The maintenance guy sounds great! :) I think that the places are just not built to last in the Caribbean or something? I don't fully understand it, honestly. I just hope things get resolved and there are no more floods, I mean, sheesh.
HOW's your week list of meals going? It's mid-week, now, right? I could totally go for costco pizza, and fountain soda, btw. :)
